Usage Directions:
Rehydration Instructions
Dried chanterelles must be rehydrated before use to restore their texture and release their concentrated flavor.
1. Place the desired amount of dried chanterelles in a heatproof bowl.
2. Cover them generously with hot (near-boiling) or warm water — use about 1–2 cups of water per ½–1 oz (14–28 g) of dried mushrooms.
3. Let them soak for 20–40 minutes, until fully plump and tender. Thicker pieces may need a bit longer; stir occasionally.
4. Drain the mushrooms, reserving the soaking liquid — this flavorful “mushroom stock” is gold for soups, risottos, sauces, or gravies. Strain it through a fine mesh sieve or coffee filter to remove any grit.
5. Gently rinse the rehydrated chanterelles under cool water if needed to remove any remaining debris, then pat dry.
6. Squeeze lightly to remove excess water if sautéing or adding to dishes where you want less moisture.
Tip: For even more intense flavor in soups, soak in warm broth instead of water, or combine the reserved soaking liquid with vegetable/chicken stock.
Sautéed Side or Topping — After rehydrating, sauté in butter with garlic, shallots, salt, and a splash of white wine or sherry. Serve over steak, chicken, polenta, or toast.
• Risotto or Pasta — Add chopped rehydrated chanterelles (and their soaking liquid) during cooking for an luxurious wild mushroom risotto or creamy pasta sauce.
